TOASTED MUESLI RECIPE

This recipe comes from one of my good friends who always makes her own. It's hard to know how much sweeter is included with bought muesli varieties, especially toasted muesli.  Making your own is a perfect way to ensure you know what is in it.  This tasty muesli recipe is a great base, where you can add and subtract to tailor to your taste.

Ingredients:
5 cups rolled oats
1 cup pepitas (pumpkin seeds)
3/4 cup sunflower seeds
1 cup raw whole almonds
2 tbsp sesame seeds
1/2 tbps cinnamon
50ml water
1/2 cup honey
1 1/2 cup shredded coconut
2 cups sultanas
Method:
Preheat oven at 120 degrees Celsius.  Line a large and deep baking tray with baking paper.

Mix rolled oats, pepitas, sunflower seeds, almonds, sesame seeds and cinnamon in a large bowl.

Combine water and honey.  Pour honey mixture over the dry ingredients and mix until everything is coated.

Spread muesli into the lined tray.  Bake in the oven for about 1 1/2 hours, stirring every 20-30 minutes, until crisp and golden brown.

Cool for about 30 minutes.  Mix in shredded coconut and sultanas.

Serve with fruit, yoghurt and/or milk.
