ROCKY ROAD RECIPE

Rocky Road - the totally delicious, but not so pretty dessert treat.  Extremely easy to make and perfect for kids to help out in the kitchen.  I made this particular Rocky Road recipe because my BF is allergic to peanuts.  I was surprised when he told me that he had never had Rocky Road before because the nut component is usually peanuts.  As a slight twist, a combination of pistachios and almonds were used.  If you need a nut free version, try adding something else with a bit of crunch, such as honeycomb or biscuits.


Ingredients:
400g Dark chocolate
220g Turkish delight
250g Pink and white marshmallows
80g Whole pistachios
150g Whole almonds


Method:
Preheat oven to 220 degrees Celsius. 
Place pistachios and almonds on a lined baking tray.  Bake in the oven for approx. 5-10 minutes until nuts start to colour. 

Spray a brownie tray with can oil and stick grease proof baking paper to it.

Chop marshmallows in half.

 Chop Turkish delight into small pieces.

 Roughly chop oven roasted nuts.

Place Turkish delight, marshmallows and nuts into a large mixing bowl.  Mix and try to separate all the ingredients.

Break up dark chocolate pieces into a microwave safe bowl.  Microwave on high for about 2 minutes until chocolate has melted.

Using a spatula, scrap all the melted chocolate into the large mixing bowl and stir to combine with all the other ingredients.

Transfer all the mixture into the prepared brownie tray and level with a spatula.  

Refrigerate until the chocolate has set, approx. 1 hour.

Once set, take out the rocky road and place onto a chopping board.  Run the blade of a large knife under hot tap water or submerge into a glass of hot water for a minute or so.  Using the hot bladed knife, cut the rocky road into squares.

Eat and enjoy!
