I love avocados and there is simply nothing better than homemade guacamole. Give this easy recipe a go. Trust me, once you have make your own guac, you'll never look back. Top your delicious guacamole onto nacho corn chips to make them super special and yummy.
Guacamole Ingredients:
3 avocados,
ripe
1 lime
1 tomato,
diced
½ red
onion, finely diced
½ bunch of
coriander, finely chop stems & roughly chop leaves
Salt &
pepper, to taste
Guacamole Method:
Roughly
mash avocados with a fork. (Note: Keep
the seeds.) Squeeze in the lime juice and mix to combine.
Dice tomato, red
onion and coriander.
Combine all
ingredients and season with salt and pepper, to taste.
(Tip: If you aren’t eating the guacamole
straight away, put the avocado seeds into the dip and tightly wrap with plastic
wrap, taking out as much air as possible.
The lime juice, avocado seeds and plastic wrap will all help keep the
dip fresh.)
Nachos Ingredients:
Plain corn
chips
Tasty cheese,
grated
Tomato salsa
Jalapeños,
diced
Light sour cream
Nachos Method:
Pre-heat
oven to 200 degrees Celsius. Place half
the corn chips into an oven proof dish.
Sprinkle half the tasty cheese over the top. Repeat with the rest of the corn chips and
cheese.
Place into the oven for about 10
minutes or until cheese has melted.
Top
with tomato salsa, jalapeños, guacamole and sour cream just before serving.
Serve warm. (Note: I don’t like putting all
the toppings on prior to placing in the oven as I find the corn chips get soggy
too quickly.)
